Longevity Healing Fish Soup

Ingredients

  • 1–2" piece fresh ginger, cut into thin matchsticks

  • 3–4 cloves garlic, sliced

  • ⅓ cup goji berries

  • ¼ cup mirin

  • 1 lb fish fillet (salmon or sea bass), cut into rough chunks

  • 1 bok choy, cut into ½" pieces

  • Small handful wakame seaweed

To serve

  • 1 green onion per person, thinly sliced

  • Soy sauce (to taste)

  • Extra minced garlic and ginger (optional)

  • Lemon zest (optional)

Instructions

  1. Bring 6 cups of water to a boil. Add goji berries, ginger, and garlic. Reduce heat and simmer for 10 minutes.

  2. Add bok choy, fish, and mirin. Simmer for another 10 minutes.

  3. Stir in wakame, then add green onions and soy sauce. Turn off the heat.

  4. Serve hot, topping with lemon zest or extra garlic and ginger if desired.
